The importance of vapor barriers and
cooling units:
Whether your wine cellar is on the humid East Coast or the dry West, it is essential that it have a
vapor barrier and cooling unit. In humid climates, the moisture in the air filters into the bottle
through the seal and cork; and in dry climates, the moisture in the wine is pulled out through the
cork and seal into the dryer air outside the bottle. In both circumstances, the volume and quantity
of the wine is adversely affected.
Similarly, wine stored in a home or
restaurant, even if in a cool part of the
building, will be subjected to cooler
temperatures during the winter, and at
night, and warmer temperatures during
the summer and during the day, when the
building is occupied. Wine must be
maintained at a constant 56 degrees
Fahrenheit. Temperature fluctuations
will gradually effect the quality of the
wine.

Without a properly designed and
positioned cooling unit and vapor
barrier, fine wines will eventually
deteriorate, destroying what may be
a substantial investment.
Vents from the external cooling unit are located
in the base of the diamond bins.

~ work with you and your architect to incorporate the cooling unit vents
into the design of your cellar.
